Hm, so many great things you could make. I would cook a few chicken breasts, ( you can fry them in a pan but use water instead of butter or oil). Once they are cooked you can cut them into strips and add cooked rice (wild rice, brown rice), black beans,corn and some salsa. Heat everything up together and you are done! You can serve it with tortillas and some fat free sour cream or as is.
